Lexi’s Quarantine Sushi Recipes

From the age of two years old, sushi has always been my favorite food. I’ve spent more money on sushi in my life than I’d like to admit… and when quarantine rolled around, I knew I had to learn to make it or else I’d be broker than broke. Luckily, I’ve found it to be shockingly easy and such a fun activity to do with family or whomever you’re locked down with. Especially with rolls, you can use any filling you want! Smoked salmon is an example of a great substitute filling for sushi-grade salmon, which is so hard to find. Here are a couple of my favorite sushi recipes you can make at home!

California Roll

You’ll Need:

  • Sushi rice (make your own or pick it up pre-made from a local sushi restaurant)
  • Nori
  • Imitation crab
  • Avocado
  • Sriracha
  • Mayo
  • Sesame seeds
  • Saran wrap

Directions

  1. Lay down a piece of saran wrap on a cutting board with a piece of nori on top. Wet your hands and spread the sushi rice on the nori. Make sure to fully cover the nori
  2. Flip over the nori so the rice side is facing down
  3. Place crab and avocado inside and start rolling with the saran wrap on the outside (so the rice doesn’t stick to your fingers!)
  4. Once you’ve completely rolled it, start cutting into slices through the saran wrap so the roll doesn’t fall apart
  5. Mix sriracha and mayo to make spicy mayo and drizzle it on top of the roll
  6. Top with some sesame seeds and voila!

Spicy Tuna Crispy Rice

You’ll Need:

  • Sushi rice
  • Vegetable oil
  • Sushi grade tuna (Fresh Market has buy one get one deals for sushi-grade tuna steaks all the time!)
  • Sriracha
  • Sesame oil
  • Mayo

Directions

  1. Chop sushi-grade tuna into fine pieces and place it into a bowl
  2. Add sriracha, mayo, and sesame oil into the chopped tuna. I don’t really use measurements, I just kind of eyeball everything, but definitely start out with less and taste until you find a mixture you like!
  3. Heat vegetable oil in a pan on medium to high heat
  4. Once the pan is hot, place square/rectangle molded pieces of sushi rice into the pan and brown them on each side
  5. Remove from the pan, and put it on a plate to add spicy tuna mixture on top
  6. Serve with a side of soy sauce and you’re all set!!

By combining these two recipes, you can even make a super easy spicy tuna roll. I hope you enjoyed these recipes and find yourself making sushi during this quarantine.
